Is there a better way of working out how many sharps and flats are in a specific key signature?

What things should I check for i.e. nasty things like F double sharp and B double flat? How do I make sure I sharpen or flatten a note accordingly?

You won't find double sharps or flats in key signatures, they only occur as accidentals.

To work out how many sharps there are, start at C (major) which has none. Every time you count upwards 5 notes, add one sharp. So, count 5 notes up from C and you hit G, so G has one sharp. Count 5 up from G (in G major), and you get to D, which has 2 sharps and so on. When you get to 7 sharps, (C sharp major), you can't go any futher. The series goes like this C-G-D-A-E-B-F#-C#

To work out how many flats, start at C again, and count downwards 5 notes. F major has 1 flat. Count down 5 notes in F major and you get to Bb - 2 flats, and so on, till you get to 7 flats. C-F-Bb-Eb-Ab-Db-Gb-Cb.

You will notice that F# and Gb are basically the same note - both have 6 sharps/flats.
C# has 7 sharps while Db only has 5 flats, so Db is more popular!
Cb has 7 flats while B has only 5 sharps, so B is more common!

Minor keys signatures are the same as the major key a minor third (3 semitones/half steps) up - so A minor is the same key signature as C major, G minor is the same as Bb major and so on.
